Homemade soup was really rare in the western world a few years ago. In fact, you could eat it only at grandma’s, if you were lucky enough to have her. But, with the recent popularity of bone broth, homemade soups came back in fashion. Since the slow home cooking is the healthiest thing you can afford, here’s a Keto version of good old soup with dumplings that is almost free of carbs.
How do we make it Keto friendly?
Simply, we don’t use flour or any other starch. Instead, this version combines eggs with psyllium. This is the most natural keto-friendly way to make dumplings. I’ve seen some recipes with xantham gum, and I would like to point out that it’s a very unhealthy ingredient. Try to avoid it and go with good old psyllium. Keto soup with dumplings
Preparation time 10 min. (Prepare the bone broth in advance)

- 1 litre beef bone broth
- 2 medium parsley root
- 1 egg (large)
- 1 tablespoon psyllium husks
- 2 tablespoons chopped parsley leaves
- 1 tablespoon chopped celery leaves
- 3 cloves garlic
- 1 teaspoon sea salt
- 1/5 teaspoon black pepper
- 1/2 teaspoon chopped dried hot paprika
- 1 teaspoon dill
- 1/5 lemon (juice)
- 1 tablespoon turmeric
Place the bone broth into a deep cooking pot. Add parsley root, garlic and salt. Heat it until it starts boiling and then reduce the heat so that it simmers slowly. In a small bowl mix the egg and psyllium with a pinch of salt and some dill until it becomes unified. Set it aside for 3 minutes. Take a teaspoon and place some of the mixtures into the boiling soup. Let each dumpling come up before placing another. Now add chopped parsley and celery leaves and all spices except turmeric. Let the soup boil for another 5 minutes. This will allow the dumplings to cook. when the soup is ready, pour it into deep plates or bowls and let it cool a bit. Now add lemon juice and sprinkle with turmeric.
