Ice-cream became an urban legend, almost a matter of modern mythology. Billions of childhood stories and memories include this simple, yet irresistible frozen dessert. However, when you switch to Keto lifestyle, most probably you will have to fight this temptation in the days of high temperatures.
Summer, vacations, temptations…
The bright days of summer, sweat and heat have arrived in the Mediterranean area. Hordes of tourists are stopping by colourful vitrines and getting their portion of frozen pleasure in a cone or on the stick. Each of us remembers the taste of their favourite brand. When we were children, these things were extremely important to us. It’s almost as if the memory of childhood is encoded in our DNA. The very thought of ice-cream makes our mouth water and gives a signal of happy memory to the brain. But how safe is your ketosis in the world of carb-dominating ice-creams?
Industrial Ice-cream fraud
Since Keto and other low-carb lifestyle became viral, industrial producers started offering all sorts of keto-friendly, low-carb, sugar-free, fat-free ice-creams packed in bombastic, colourful boxes and wraps. We should think twice before we purchase something like that. In fact, I’ve checked most of them and they are far from being keto-friendly! They are loaded with carrageenan, soy lecithin, artificial sweeteners such as maltitol, acesulfame K, dextrose, maltodextrin, aspartame and other taste enhancers that are highly toxic!
How to stay safe on vacations?
Some of you might say:
-Well, I am on vacations, I can break the rule every now and then.
Why should you cheat? Who are you cheating? Yourself, perhaps! Your body passes through a huge stress when you expose it to energy metabolic change. Especially if you are doing it often. Remeber, as you have reached your healing state of ketosis, there’s no reason to destroy it for a taste of frozen sugary cream.
Greek goes Keto solution
Just recently, while I was walking with my wife through a touristic area, we both saw many tourist buying and enjoying frozen balls of sugar. I must be honest with you, we both wished for it. But, as we are both eager to find a solution to every craving, we rushed into a supermarket and bought some Mascarpone cheese, organic raw cacao, vanilla extract and a small box of organic strawberries. We went back to our hotel room which was equipped with a small freezer. Here’s how we made the best Keto ice-cream on the vacation in just 5 minutes. Of course, it took us another 30 minutes for freezing, but when you are on vacations, time is not your problem! If your accommodation does not offer a freezer, just place the cream into a normal refrigerator, and eat it later when it gets chilled.
Quick Keto Ice-cream
- 250 g Mascarpone cheese
- 100 ml sparkling mineral water
- 2 tbsp of stevia sweetener
- 2 tsp of vanilla extract
- 2 tbsp organic cacao powder
- 6 strawberries
- Using a fork, mix Mascarpone with mineral water until it gets fluffy.
- Add cacao, stevia and vanilla. Mix well.
- Place the mixture in the freezer for 30 minutes. (or in the refrigerator for 3 hours)
- Cut the strawberries and garnish your ice-cream
