My previous recipe for Greek keto meatballs went quite well on all social media. Followers asked me if they cook be prepared without tomato sauce. Well, of course, I remembered the famous Greek sauce which is totally Keto friendly. We call it avgolemono (αυγολέμονο) which literally means egg and lemon. Believe it or not, this creamy yellow sauce in its original version doesn’t contain any flour or starch. The chemical reaction of lemon acid and eggs creates the same effect and you end up with a smooth, silky, thick sauce that everybody loves. However, avgolemono requires patience, slow approach,  and some level of skillfulness in the kitchen.

The oriental influence

If you are breaking your tongue to pronounce the name of this dish – giouvarlakia avgolemono – it’s quite understandable. This dish is a clear example of Turkish influence on Greek cuisine. Giouvarlakia literally means something round or spheric in Turkish. Even though some original versions call for rice or bulgur, this Keto recipe is 100% safe to go. If you check the nutritional values you will notice that the portion of this aromatic Mediterranean dish will provide you with the exact ratio of macros that ketogenic diet requires. I would recommend eating it with a side dish of roasted, steamed or boiled vegetables of your choice.

Keto Giouvarlakia Avgolemono

Ingredients

Meatballs

  • 600 g ground beef grass-fed
  • 1 large egg free-range
  • 4 tbsp sesame seeds
  • 1 small white onion
  • 70 ml olive oil extra virgin
  • 3 cloves garlic
  • 1/2 tsp cinnamon
  • 1 tsp oregano
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1 tsp dried sweet paprika flakes

Avgolemono Sauce

  • 200 ml water filtered
  • 2 large eggs free-range
  • 1 large lemon just the juice
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • 1 tsp dried basil
  • Pinch nutmeg
  • 4 tbsp parsley freshly chopped

Instructions

  1. Place the onion, garlic and egg in a food processor. Process it until you get a smooth mixture

  2. Combine this mixture with ground beef using your hands

  3. Add all the spices and sesame seeds and keep mixing. Grease your hands with olive oil and start creating small to medium meatballs

  4. In a deep frying pan, preheat the olive oil and add gently the meatballs. Keep turning the meatballs until they get golden-brown from all sides

  5. When the meatballs are ready, add 200 ml of water and bring it to a boiling point. Reduce the heat and cook for 5 minutes

  6. Using a fork, beat the eggs with all the spices. Add the lemon juice and keep beating until you get a smooth emulsion

  7. Remove the meatballs from the heat. Add some of the liquid from meatballs to the egg mixture. Make sure you add it slowly so that the eggs don't cook and break. Now, very carefully, from a high distance poor the egg mixture to the pan with meatballs. Constantly stir

  8. Return the pan to the stove for 2 minutes on very low temperature and keep stirring

  9. Serve warm with a lot of freshly chopped parsley
