I always prefer to promote a good oldfashioned way of Mediterranean living and food preparation. However, it’s summer and it’s just about to get even hotter here in Greece. When the thermometer is high, we crave cold and juicy food. This is only natural and quite understandable.

Ok, if I accept the challenge of making a quick keto recipe, I will not compromise the healthy ingredient part. This is another extremely important factor that comes as an ultimatum in this site. Unlike numerous quick Keto recipes that are available online, I will not use a harmful microwave, I will not add artificial and industrial thickening agents that can cause more damage than any pleasure can justify. I will keep in mind that frozen fruits, if frozen properly, actually preserve most of the nutrients. Furthermore, this Quick keto dessert contains extremely beneficial goat milk that will lift the cake to another level of healthiness. Ingredients

  • 100 g (1/2 cup) butter grass-fed
  • 150 g (1,5 cup) ground macadamia nuts
  • 1/2 medium lemon juice and zest
  • 300 g (2 cups) cream cheese preferably Mascarpone
  • 150 ml (2/3 cup) goat milk extremely important for the health benefits of this cake
  • 2 tbsp stevia or monk fruit sweetener or according to your sweetener power
  • 150 g (1,5 cup) red currant You can use frozen
  • 1 tbsp natural vanilla extract alcohol-free

Instructions

  • Melt the butter and mix it with ground macadamia and lemon zest. Tap in this mixture into a cake mould and place it in the freezer.
  • Using an electric mixer, beat cream cheese, goat milk, sweetener and lemon juice until the mixture is smooth and creamy.
  • Using a spatula, mix in red currant. try not to squeeze the fruits. Leave some for decoration.
  • Take the crust out of the freezer and pour in the cream mixture. Decorate with remaining red currant.
  • Place the cake for 5 minutes in the freezer before serving.
