Keto Mediterranean lifestyle- Greek villager’s omelette

Keto Mediterranean lifestyle could be the best answer to all the contemporary diseases of humanity. Not only that people in this area live longer and happier, they also prefer organic, homemade and rustic cooking. In fact, the tradition of slow cooking did not change much, not even in the 21st century. If you visit any village in the eastern Mediterranean zone, you will find healthy 90+ years old people working in fields, or taking care of their goats, sheep, chicken, donkeys. Everything is original and authentic. I was lucky to visit a village in the Peloponnesus this summer. People there looked 20-30 years younger than they actually were! Amazing and wonderful experience.

To this, I have to say: How in the world did our ancients live healthy and long lives with eating predominantly good fats, cheese, olives, fish, and yes – meat! How come people in our islands still eat tons of goat and sheep butter, cheese, full-fat yoghurt and seafood! Their diet is not predominantly plant-based even if they do eat bread.

A great nutrition expert Michael Joseph wrote an outstanding article on 12 types of cured meat. After reading it, I just got an idea! Yes, cured and dried meat can be healthy and it can still be found on the small farms without added industrial conservatives. How will you know? Simply, look at the colour! If the dried or smoked meat product is brown, rather than red, you got yourself a healthy thing! Most certainly, nitrates and nitrites free! Furthermore, sugar and dextrose-free. What’s most interesting, it will even taste better.

If you are not experienced in making fresh cheese at home, all these wonderful farmers will sell you their top-quality fresh cheese. And then, you need to find some chicken farm for the free-range eggs! With all these treasures, you can start making the Spartan breakfast that will give your body superpowers of Greek Gods and healthy mind and soul of our Goddess!!

Villager's omelette with a Mediterranean twist

Ingredients

  • 15 g (1/8 cup) butter grass-fed (try to find goat butter)
  • 80 g (3oz) organic villager's sausage nitrates and nitrites free
  • 100 g (3.5 oz) fresh goat cheese
  • 5 medium eggs free-range
  • 2 pinch dried paprika flakes
  • 1 pinch flower of sea salt (alternatively use classic sea salt or Himalayan salt)
  • 2 pinch dried oregano

Instructions

  • Melt the butter in a deep pan and add chopped sausage. Stir well. 
  • Add crumbled fresh goat cheese and keep stirring.
  • Add the eggs and mix them with a wooden spoon. Let the omelette cook for 30 seconds and then add your spices. Cook for another 3 minutes.
  • Serve with an additional sprinkle of your favourite Mediterranean spices.
