Gelatine is one of those rare things left to Ketonians to satisfy their fruit cravings. And not only that, if your Keto treat is prepared with grass-fed beef gelatine, it’s extremely healthy! Furthermore, grass-fed beef gelatine will provide you with the beneficial collagen. However, gelatine on its own is quite tasteless! In the world outside of Ketonia, they usually prepare it with fruit juices and it ends up doing more damage than help. Fructose content in gelatine desserts is skyrocketing and making it quite an unhealthy choice. To think of it, they offer these kinds of jello desserts with added sugar in hospitals!

Instead of fruit juice, why not use tea?

To avoid complications, I mean fructose and sugar in general, we can jump from the fruit kingdom to the tea republic! In fact, there’s this magic dynamite among herbs which develops more vitamin C as you are boiling it. I know it sounds impossible, but in nature, there are fruits that don’t lose the vitamin C as you boil them. In fact, they provide you with more of it if you boil them! One of those gunpowders of nature is rose hip.

Gunpowder Rosehip Gelatine

gelatineYou might wonder how can boiled Rose Hip be abundant in vitamin C? Especially because we all know that cooking vegetables or fruits “kills” Vitamin C. That’s an oversimplified explanation. In fact, heat can destroy Vitamin C and extended boiling usually destroys it in many fruits and vegetables. However, after boiling rose hip for only 10-15 minutes, approximately 85% of Vitamin C will still be in the water — only about 15% is destroyed. Most recipes for Rose Hip syrups and jellies require maximum 20 minutes of boiling.

Spices as the Dynamite

Did you know the meaning of the word Dynamite? Well, of course, it comes from Ancient Greek δύναμις (dúnamis, power). In this specific recipe, we will use the most powerful spices that can boost our immune system, give us the unforgettable lift in the aroma, and provide us with great antioxidants!

Ceylon cinnamon is one of those dynamites and you should always use it in Keto cooking! We already covered all the health benefits of Ceylon cinnamon in this article. Furthermore, almighty turmeric will work perfectly as an anti-inflammatory compound, while a dash of black pepper helps this gunpowder gelatine in the initialisation.  

Ceylon cinnamon – As little as half a teaspoon of Ceylon cinnamon on daily basis has quite positive effects on blood sugar levels, digestion, immune system and general metabolism.

Gunpowder Gelatine

Ingredients

  • 1 bag rose-hip tea with hibiscus
  • 1 tbsp coconut oil cold pressed
  • 1 tbsp stevia blend sweetener
  • 200 ml (1 cup) filtered water
  • 1/3 tsp Ceylon cinnamon powder
  • 1 pinch black pepper
  • 1/4 tsp turmeric powder
  • 2 tbsp lemon juice organic
  • 1 tbsp beef gelatine grass-fed, powdered
  • 3 fresh mint leaves for decoration

Instructions

  1. Place the teabag in a small saucepan. Add stevia and coconut oil. Pour in 200 ml boiling water and cover with a lid or a plate.

  2. Mix gelatine with 2-3 tbsp of cold water and add it to the tea. bring it to a boil so that the gelatine dissolves. Set it aside for 10 minutes to cool down a bit and then mix in Ceylon cinnamon, turmeric and a pinch of black pepper. In the end, add lemon juice.

  3. Pour in a dessert glass or gelatine mould and freeze for 30 minutes before serving. Alternatively, refrigerate for 3 hours. Decorate with fresh mint leaves or add them to the gelatine before pouring it into a mould.

Recipe Notes

You can use whole dried rose hip fruits for tea preparation but then the colour will not be intensive. In this case, use 1 tbsp of dried rosehip and boil it for 10 minutes in 250 ml water. Strain and then prepare the gelatine as described in the recipe.
