Keto Lemonopita looks as good as it tastes. And it’s extremely easy to prepare. Of course, preparing Keto desserts became our passion, but let’s talk about this subject a bit deeper. Why do we need Keto dessert and what’s the purpose? So many times we had to explain to Keto extremists that life without dessert is not the only way to do Keto properly. In fact, for beginners. it will be the hardest possible quest. Imagine, you are accustomed to a portion of pure pleasure at the end of your meal. Now, this would be ideal and we will not talk about eating dessert in between meals. Even the birds know it’s wrong on so many levels. But, what the effect of the “forbidden fruits” does to humans have been shown so many times in history. We simply get obsessed with forbidden stuff.

What makes Keto dessert really Keto?

Some would say macros. Of course, it’s macros, but have in mind, it’s only about the macros. Now, I’ve seen thousands of so-called Keto recipes all around the web which include more than 9 or 12 grammes of net carbs. Sorry to disappoint you, but that’s just low carb, that’s not Keto! Why?-  You might ask. Well, you can have a piece of such dessert, and good luck with the rest of your carbs from your meals. The point of Keto dessert is to serve as a treat but at the same time, it has to have other functional purposes. For example, many Ketonians struggle with intaking enough of good fats, and sometimes they also don’t have enough protein. A slice of Keto dessert is really Keto only if it contains:

  1. Less than 4g net carbs
  2. A high percentage of good fats
  3. Organic, free-range and grass-fed ingredients
  4. Moderate protein
  5. Not too much sweetener

Why do you need to decrease the usage sweetener?

If you have been doing clean Keto, which is the only way you’ll have health benefits, your taste buds are already purified. You will feel natural sweetness from food. This means that a single drop of 100% stevia extract is way too much for you! On some occasions, you will be able to enjoy a fat bomb which doesn’t contain any added sweetener. No matter how great Monk fruit or Stevia sweeteners are, for the optimal health – you need to listen to mister Mies van der Rohe!

Keto Lemonopita – easy enough for beginners

If you have never baked a pie, or haven’t tried baking goodies while on the ketogenic diet, you will be surprised with the ease of this recipe. Patience, of course, is necessary! However, the procedure is quite simple. The key is in organic and fresh ingredients and perfect timing! Are you ready? Well, ready or not, here we go! Ingredients

Crust

  • 4 large eggs free-range
  • 120 g (1/2 cup) butter, grass-fed we used goat butter
  • 2 tbsp lemon zest
  • 1 tbsp orange zest
  • 1 tsp ground cloves
  • 1/2 tsp sea salt
  • 1/3 tsp citric acid
  • 4 micro scoops 100% stevia extract Ideally, you will use monk fruit extract
  • 4 tbsp almond flour
  • 2 tbsp coconut flour
  • 1 tbsp dried coconut crumbs
  • 1 tbsp psyllium powder

Filling

  • 6 large egg yolks free range
  • 3 large egg whites free range
  • 100 ml (1/2 cup) lemon juice organic, freshly squeezed
  • 2 tbsp lemon zest
  • 300 g mascarpone organic, additives free
  • 1 tbsp vanilla extract alternatively use Rum extract
  • 4 micro-scoops 10% stevia extract or monk fruit

Instructions

  • Beat the eggs with melted butter for 5 minutes. Add sweetener, salt, citric acid, lemon zest, orange zest and ground cloves.
  • Combine together all the dry ingredients and start adding them to the wet ingredients spoon by spoon while mixing on a lower speed. The dough will thicken.
  • Grease an 11-inch pie pan with some coconut oil and place the dough in the middle. Press it with your fingers to spread it all over the pan's bottom and sides. Stub the dough with a fork.
  • Preheat the oven to 200ºC (400ºF) and bake the crust for 10 minutes.
  • for the filling, beat the eggs with sweetener and vanilla extract for 2-3 minutes. Then add lemon juice and lemon zest. Keep beating. At this point add mascarpone and mix well. The mixture will be "liquidish" but don't worry, it will thicken in the oven. 
  • Pour this mixture in the semi-baked crust and return to the oven. Reduce the temperature to 180ºC (350ºF) and bake it for 15-17 minutes. Turn off the oven and let the pie sit inside for 10 more minutes. 

Decoration

  • using a pastry bag, decorate the pie with some mascarpone and frozen berries of your choice. We used raspberries. 

Notes

If you don't have 100% Stevia or Monk fruit extract, adjust the amount of sweetener to your taste, but try not to use anything else except Stevia, Monk fruit or Erythritol based sweeteners.
