Roughly grind the almonds in a food processor. Then, place them in a large skillet and roast for 3 minutes on 120ºC (248ºF) Add almond flour and roast until it becomes light brown.
Remove the almonds and almond flour from the oven and transfer into a mixing bowl. Let it cool down.
Add stevia-erythritol blend, salt and baking soda. Combine well.
Add softened butter, lemon juice and eggs. Work with your hands until it forms a dough
Place the dough in between 2 parchment papers and roll it into 0,5 cm thickness
Cut out the cookies with moon shaped cookie cutters and place on a baking sheet lined with parchment paper
Bake at 180 C degrees for 18 minutes
When the cookies cool down, sprinkle them with powdered stevia-erythritol blend sweetener. Enjoy them after a good Keto meal.
